Stark Conde Cabernet Sauvignon Stellenbos 750MlThis 2017 Cabernet is made using traditional Bordeaux varieties grown on the estate: 85% Cabernet Sauvignon, 8% Petit Verdot, 4% Petite Sirah, 2% Malbec, 1% Cabernet Franc. Blackberry fruit aromas with tea leaf and cedar notes. The palate is rich and polished with dark fruit, mocha flavours and balanced acidity. A long finish with fine tannins typical of Jonkershoek Valley wines. The grapes were hand sorted and crushed into small open top fermentation
This 2017 Cabernet is made using traditional Bordeaux varieties grown on the estate: 85% Cabernet Sauvignon, 8% Petit Verdot, 4% Petite Sirah, 2% Malbec, 1% Cabernet Franc. Blackberry fruit aromas with tea leaf and cedar notes. The palate is rich and polished with dark fruit, mocha flavours and balanced acidity. A long finish with fine tannins typical of Jonkershoek Valley wines. The grapes were hand sorted and crushed into small open-top fermentation vats, with manual punch downs every 4–6 hours until dry. At dryness, the wine was basket-pressed and racked to barrel for malolactic fermentation and barrel maturation. Aged in 300l French oak (30% new) for 20 months. Bottled without fining or filtration.
