A versatile all-in-one cabinet that rapidly chills and freezes product while also thawing, proofing, slow cooking, and warming in a single reach-in footprint.
- Performs blast chilling, blast freezing, thawing, retarding/proofing, slow cooking, and warming.
- Accommodates (12) 18" x 26" x 1" pans with 2.56" shelf spacing.
- Chills 100 lb from 194°F to 37°F in 90 minutes and freezes 70 lb from 194°F to 0°F in 240 minutes.
- Includes programmable electronic controls with LCD display, HACCP monitoring, a printer, and one core temperature probe.
- Self-contained, bottom-mount refrigeration in a stainless steel cabinet with manual defrost, adjustable feet, and a safety micro-switch.
