It was fermented slowly over winter without any added sugar, flavourings, enzymes or concentrate before bottle conditioning for a natural, gentle fizz. This has been aged for nearly four years on its lees, giving great funk, must and zest.
Pollen uses quality cider apples from both untouched, traditional orchards and commercial fruit farmed with minimal to zero chemical sprays. These are crushed, pressed and fermented with no additions other than Champagne yeast and a very, very low sulphur dose of 40 parts per million. Bottle conditioned but not disgorged.
